Texas BBQ Brisket: Back to my Roots: YUMMM

Mom's Texas BBQ Brisket 
I'll  add a picture here when it is done.... I can't wait for dinner!

BBQ Brisket

1 whole Beef Brisket, trimmed of excess fat
2 Tablespoons Worchestershire sauce
½ teaspoon each: Celery Seed, Mustard Seed, Coriander, Garlic Powder, Black Pepper, and Chili Powder (adjust amounts to your liking)
¼ teaspoon cayenne pepper
1 teaspoon salt
2 cups good quality BBQ Sauce such as Masterpiece (for smoked flavor choose a sauce with mesquite or hickory flavoring) 

NOTE: AMELIA's FAVORITE IS THE SALT LICK BBQ SAUCE that you can order if you are not anywhere near Dripping Springs Texas :)

3 Tablespoons Brown Sugar

Grind dry seasoning together with a mortar and pestle.
Rub brisket all over with Worchestershire Sauce and dry seasoning mixture.
Cover and marinate 6-8 hours, or overnight, in the refrigerator.
Bake, covered, at 225 degrees 7-8 hours. Drain all but about 2 cups of liquid from brisket (reserve for soup or gravy). Mix BBQ Sauce and brown sugar together. Pour over brisket. Return to oven and continue to bake, uncovered, for 1-1 ½ hours longer, until tender.

Alternate: Simply marinate and cook in Zesty Italian Salad Dressing, following cooking directions above.
